 11:30 AM - 12:30 PM Seminar
12:30 PM - 2:00 PM BioCenter Annual Summer BBQ
Join Prof. Phil Crews of UC Santa Cruz to uncover the chemical mysteries of winemaking. All registrants will be invited to attend the Annual BioCenter Summer BBQ immediately following the winemaking seminar.
Wine quality and winemaking approaches have been debated for hundreds of years. A 21st century approach to winemaking can be very scientific because many aspects of this complex system appear to be understood. For example, Wired Magazine reported on the Grapes of Math in an comprehensive article to underscore that during the last decade consulting companies have emerged to help winemakers craft award winning wines. This approach uses databases created with the latest techniques of bioanalytical chemistry. On the other hand many subscribe to the idea that successful winemaking can be achieved by just using the right-side of the brain. An overview of some recent advances in winemaking technology will be reviewed. The left-brain vs. right brain approaches to wine creation will also be explored using case examples illustrated by sensory evaluation.
Speaker

Pelican Ranch Winery is a small, family owned and operated winery specializing in Rhone and Burgundy style wines from the best vineyards in California. Established in 1997, the winery is located only a few blocks from Monterey Bay which provides the constant, cool, coastal influence that allows for controlled, slow fermentation. The result is rich, full-flavored, complex wines. Pelican Ranch wines are labeled according to their single-vineyard designation. Production is limited to 100 cases from each vineyard.
The winery began its commercial production in a shared facility in Scotts Valley, California. March 28, 2003, marked the opening of their new facility in Santa Cruz. Owners Peggy and
Phil Crews love the location of their "city winery." Only 2 blocks off Highway 1 in the Swift Street Courtyard, Pelican Ranch is easy to find whether you're a "local" or a weekend visitor. The Courtyard, adjacent to Kelly's French Bakery, is the perfect spot to relax with lunch and a bottle of wine. Pelican Ranch is minutes away from the best Santa Cruz has to offer - Pacific Garden Mall, Santa Cruz Beach Boardwalk, West Cliff Drive and Natural Bridges State Park.
